Ian's Amazing Roast Potatoes with Gazegill Homemade Beef Dripping

Ian's recipe for roast potatoes with homemade beef dripping is always a winner on a Sunday with the family, especially with Ian's son Ollie!

The secret to this recipe is the homemade beef dripping, which adds an incredible depth of flavor to the potatoes. 

Parboiling the potatoes before roasting ensures that they're cooked through and soft on the inside, while roughing up the edges gives them a delicious crispy exterior. 

 

Adding garlic and rosemary to the roasting pan with the potatoes enhances the flavour even more. 

Ingredients:

  • 2 lbs. potatoes (Maris Piper or King Edward)
  • 1/2 cup Gazegill homemade beef dripping
  • Salt and pepper
  • Fresh thyme (optional)
  • Garlic and rosemary (optional)

Instructions:

1) Preheat the oven to 400°F (200°C).

2) Peel and cut the potatoes into even-sized chunks. Make sure they're not too small, as they will shrink during cooking.

3) Parboil the potatoes in a large pot of salted water for 10-12 minutes. You want them to be cooked through but still firm.

4) While the potatoes are cooking, melt the Gazegill homemade beef dripping in a roasting pan in the oven. Make sure the beef dripping is hot before adding the potatoes.

5) Drain the potatoes and return them to the pot. Shake them around to rough up the edges a bit.

6) Carefully transfer the potatoes to the hot roasting pan with the melted beef dripping. Use a spatula to coat the potatoes in the beef dripping and arrange them in a single layer. Sprinkle with salt and pepper, and fresh thyme if desired. Add garlic and rosemary for extra flavour, if desired.

7) Roast the potatoes for 40-50 minutes, turning them over halfway through cooking. You want them to be golden and crispy on the outside and soft and fluffy on the inside.

8) Remove the potatoes from the oven and drain them on a paper towel-lined plate to remove any excess oil.
