Davinia Taylor and partner Matt (the cook of their household) regularly buy our organic whole fillet to make carpaccio. It is a deceptively easy process, you simply coat the meat in a mix of dijohn and peppers corns wrap tightly in cling film and leave to firm up in the fridge for an hour then sear the whole piece, cling wrap again but this time freeze it. After an hour remove the cling film and finely slice the meat. Carpaccio is effectively raw meat but this makes for a decadent starter for any dinner party. It is traditionally served with rocket and drizzled with extra virgin olive oil.
