Braising steak is a popular cut, this piece of muscle meat is naturally firm and requires a longer cooking time. Yet, as the meat stews, it becomes beautifully delicate, soaked in the flavours of your chosen ingredients!
The diet of a cow also impacts the flavour of the meat, this is why we allow our cows to graze the fields throughout the year and when it becomes too wet and cold, the grass we harvest in August is fed to them, so, they are never without their primary food source. This is traditional farming as opposed to relying fodder developed from grains grown in other countries. We hope this is evident in the end product!
