The Process
Whole sides of our heritage breed organic pork are home-cured in a precise combination of salt, raw organic cane sugar and organic molasses. This old fashioned natural method takes longer than commercially produced bacon, which can take only days. Our butchers give our naturally produced bacon plenty of time, several weeks in fact!
This magical process ensures the flavour is superior and still tastes like bacon used to taste when Emmas parents and grandparents ran the farm. Taken from our herd of rare breed pigs, outdoor reared in the summer months and in cosy barns stacked with straw in the winter months, free to roam large spaces exploring their natural behaviour whilst foraging for goodies. We believe that rearing our pigs alongside nature enhances the flavour of our pork and ultimately our organic nitrate-free bacon.
Please be aware that due to our rare-breed oxford sandy & black pigs, there may be small black hairs on our bacon, as it is impossible to remove these hairs without degrading the quality of the meat. This is very normal, and the hairs will disintegrate upon cooking.
