Organic gherkins are similar to little cucumbers but a slightly different type. The pickling provides a wonderfully crunchy sweet and sour taste. Probably our favourite use of organic gherkins is in a herring salad that Axel's mum makes traditionally on Christmas eve which also includes beetroot and apple.
Gherkins work well with fish and pickled foods, fish pies, in sandwiches or on their own with salads.
