A cockerel (sometimes called a capon) is simply a large, free-range chicken given the time to slowly mature and grow.
That extra time on the farm is what makes the difference: a deeper, more developed flavour than a standard fast-grown bird, without straying from the familiar territory of chicken.
It's a brilliant option if you want that classic roast-dinner flavour on Christmas Day but don't want the size (or the cost!) of a turkey. Free-range, properly reared on a local farm here in Lancashire, and full of character.
