Our free-range geese are reared on a local farm here in Lancashire, raised with the space and freedom that makes for a truly traditional Christmas bird. Goose has a lower meat-to-bone ratio than turkey, but what it lacks in yield it makes up for in flavour - rich, succulent and a world apart from a supermarket bird.
Paired with crisp roast potatoes cooked in its own fat, goose makes for a real showstopper of a Christmas dinner - the kind of bird that gets your guests talking.
