Organic Nitrate-Free Christmas Gammon

Our organic gammon comes from our rare-breed Oxford Sandy and Black pigs, slow-grown and free to roam our outdoor pig pens. Free to explore and forage as pigs naturally would, they develop a depth of flavour you won't get from an intensively reared animal.

Each joint is dry cured using an old recipe from the farm archives, sea salt and organic molasses, nitrate-free, the traditional way. Most gammon today is brine-injected for a quick cure that leaves it waterlogged; ours is washed and hung to dry instead, drawing moisture out slowly so what you get is proper, old-fashioned flavour.

Available at 2kg (serves up to 6) or 4kg (serves up to 12), smoked or unsmoked.
